Spiced Chicken Drumsticks
Middle Eastern flavours meet the ubiquitous chicken, with perfect results every time

Ingredients
2 tsp Carla’s Mild Curry Powder
8 chicken drumsticks
1 tbsp olive oil
1 tbsp runny honey
Sea salt and freshly ground black pepper
½ a lemon
Instructions
Heat the oven to 240 degrees Celsius and line a baking tray.
With a sharp knife, slash the sides of the chicken drumsticks to allow the flavours to seep in and the meat to cook evenly.
Put the chicken in a bowl, and add the oil, honey and Carla’s Mild Curry Powder.
Mix well to ensure the chicken is coated.
Tip the chicken onto the baking tray and add some salt and pepper.
Put into the oven for 45 minutes, turning the drumsticks every 15 minutes or so.
Remove from the oven and leave to cool for a few minutes, then add a squeeze of fresh lemon juice. Serve with salad for a filling, healthy lunch.
