Gingerbread Cupcakes
These are a delight to eat with a scrumptious icing specially designed to seriously top these off with style. Enjoy for any day, but especially perfect for Mothers Day!

Ingredients
1 pack Carla's Gingerbread Cupcake Mix
1/2 cup Water
1/4 cup Maple Syrup
ICING
110g Butter, Room Temp
110g Butter, Melted
2-3 cups Icing sugar
1 tsp vanilla extract
1 tsp cinnamon
2 tbsp honey

Instructions
Blend the Mix with 1/2 cup of water and 1/4 cup of maple syrup.
Spoon into 12 greased paper cases and cook in a pre-heated oven at 180C for 18-20 minutes
ICING
Add both butters and icing sugar to a mixing bowl. Beat together until light and fluffy. Add rest of ingredients and beat until combined. Add more icing sugar if needed. Fill a piping bag and have fun icing the cupcakes!
