Dukkah Crusted Salmon
A fresh and easy to cook salmon dish delicious paired with couscous, salad and a squeeze of fresh lemon.

Ingredients
3 tsp Carla's Dukkah Blend
2 Salmon fillets (1 per person)
Approx 2 handfuls of hazelnuts*
3 tsp of olive oil (or oil of your choice)
Couscous or rice and mixed leaf salad to serve
1 lemon, cut into segments to serve
Instructions
Roast the nuts* for 10 mins at 180°C
Blitz the nuts in a blender until finely chopped
Mix the nuts with the Dukkah blend
Mix 3 tsp of the Dukkah and nuts mix with 3 tsp olive oil and a pinch of salt
Spread over one side of each salmon fillet
Cook for 12-15 minutes in a pre-heated oven at 180°C until flaky
* For those who are not keen on nuts or have an allergy, chickpeas would be a good alternative
