We all love a good, fluffy pancake, laden with dripping maple syrup or dusted with icing sugar, or even served with a few slices of crispy bacon!

Ingredients

250g Plain Flour 1 pinch salt 1 Tbsp oil 2 large eggs 500g milk 1 Tbsp Carla's Sweet Spice Mix


Instructions

1. Put all the ingredients in your mixer. blend or process until well combined. Leave to rest at least 30 minutes. 2. The mixture should have the consistency of single cream. If it is too thick, add a little more milk and mix again. Fry in a little butter or oil in a crepe pan - pour just enough batter into the hot pan to thinly cover the base of the pan. Turn when almost dry on top and cook the second side just 20 to 30 seconds. Don't worry if the first pancake doesn't work, that often happens, even to the best of cooks!
